Hi Emilia:

For data concerning the frequency of occurence of Korean consonants and vowels in Korean text data or speech, the one thing that springs to mind is this:

Kyeryang kugo??hak yo??n'gu
Lee, Sang Oak, 1944-
2001.; So??ul : So??ul Taehakkyo Ch'ulp'anbu, 2001.

Professor Lee and his students were doing lots of statistical studies like this for a while.
